This Modern Adventure to Seville and Granda was designed by our skillful teams in Portland, Oregon, and Spain. Our trips are designed to showcase the best of a destination and promote community, sharing and celebration. We thoughtfully curate all elements for an immersive and diverse experience. Here are some of the people who you’ll be experiencing it with on the ground in Seville and Granda.

Scott, Your Trip Leader

Scott is your Modern Adventure host, ensuring a smooth and enjoyable trip for everyone. He will be your go-to for any and all questions around our daily flow, meeting points, times, what to expect and any questions or concerns that may arise.

Scott grew up in a military family with a German mother and spent his childhood in San Francisco, Italy and the deep South. He currently lives in rural Virginia, in the foothills of the Blue Ridge Mountains. This varied background taught him the importance of hospitality, good food, an open mind and lots of laughter. A University of Florida alum and former restaurant manager, he designed and led active experiences on 4 continents on bike or on foot! From sipping cappuccinos in Italian cafes, raising pints in Irish pubs, to eating dolmades in Greece and nibbling on fresh goat cheese in France, he enjoys exploring local cuisine and the cultural nuances of each region.

Local Guide

Our local guide is an expert in all things related to our destinations. They are deeply knowledgeable with respect to Seville and Granada and local history, culture and customs, and are passionate about sharing that with all of us. They are our interpreter, local host and will introduce us to the local way of life.

Tory Miller

Eating at chef Tory Miller’s restaurants in Madison, Wisconsin, is like going on a culinary world tour. Each with their own flavor and focus, Tory melds his passion for locally grown food with global inspiration. He’s a James Beard award-winner for Best Chef in America, and even beat Bobby Flay on Iron Chef Showdown. Seville and Granada with Tory will be a master class in culinary inspiration through travel.
